I have a hypothetical question:
If "my friend" has recently got his renewal and a minor speeding ticket that he was convicted in Oct. 2003 did not appear on his renewed policy. If he is involved in any claim throughout the year, can they deny coverage/cancel policy for non-disclosure?

Highly unlikely. In my many years of driving and my share of speeding tickets :) and other small infractions (turns), I never reported anything to insurance. Whenever, they did their checks, if they found something on my record, they just added appropriate charge for "minor infractions".
It was not uncommon for a ticket not to show up on renewal because they did not check the driving records every year.

Did the insurance company ask you over the phone if you had any speeding tickets? They could get you there (Ed chome in here)
If it was just a paper renewal form I think it would be OK not to disclose any information.
